Viticulture
Macabeo, Parellada, and Xarel·lo from the El Beset estate, covering 1.8 hectares, are located near the municipality of Torrelles de Foix, in the Alt Penedès region. The soil is shallow and clayey loam, with good water retention. The vines are trellised and have an average age of 30 years.
Production
Traditional Method. Separate fermentation in stainless steel tanks at a controlled temperature. To preserve its quality, we produce a free-run must with character and a differentiated typicity. Second fermentation in the bottle with selected yeasts, followed by aging on lees for 15 months, developing complexity and maintaining its freshness. After disgorging, we add a small portion of our free-run must to give it its distinctive seal.
Tasting Notes
Straw-yellow in colour with golden hues, fine bubbles, and a well-defined crown. The nose is clean, highlighting white fruit, reineta apple, brioche, and vanilla notes. The palate is energetic and elegant. Very mineral, with well-balanced and fresh acidity, and a creamy and full-bodied carbonation where the pastry and white fruit notes blend.
